Howling News
I know we're in Winter. Yes, it's snowing in New Mexico, but I decided we needed a burger cook-off anyway. To be honest-completely honest, it was the green chile I was craving the most.
A thick sirloin burger with rich cheddar. Melted and spilling over the sides. Add a dollop of green chile and it's just perfect.
I know we're supposed to be starting a diet in January.
I read all about Oprah and the national pastime for resolutions.
It's the green chile that makes me crazy sometimes.
It's a good thing we put some away because the season is over. Done. Kaput. 6 weeks in late summer is all the time we get to harvest green chile. You too can order it frozen and sent 2 day priority mail.
I just can't think of a better way to start off the new year. Can you? Besides green chile is fat free!

Here is an excerpt from an email we received from a new customer who recently moved to the east coast. This kind of letter warms my heart.Dear New Mexico Chile Co.:
For 20 years I lived in New Mexico and El Paso, Texas and took the good food for granted. Fifteen years ago I moved to the East Coast (Washington, D.C.) and haven't had a decent enchilada or huevos rancheros or chilaquiles since then -- except on trips back home.
When I found your website, the light went on. I immediately ordered three jars and made a pot of beans. The chile arrived Friday and I have been in chile heaven bliss since then.
Saturday I had red enchiladas twice. This morning I had red huevos rancheros that were so good I almost cried. Thank you, thank you, thank you.

Coyote Trail Enchilada Sauce just won two prestigious awards for excellence.
In Texas, our sauce took second place in a crowd of eight hundred entries. Wow. We were excited..
The other award was given in the Chile Capital state of New Mexico where we also won a second place trophy. The entries were deep this year. Over a thousand from several countries. This is another Scovie award for this sauce.
Christmas Salsa-Wow

Of course, we'll be making Santa Fe Chicken with our chunky Green Chile Sauce . For dessert we'll be making Roasted Green Chile Vanilla Ice Cream. Jeez, I'm getting hungry and hope I can make it till then.
Chile Guitar
My brother in law, Steve Marks has a list of innumerable talents and recently wanted to make me a guitar. Of course, this isn't just any guitar.It's a Chile Guitar and it's hand made with exotic woods.
Steve is quite the craftsman and I'm sure the sound will be fabulous. Stay tuned for more updates.
Green or Red
Don't forget the official state question. "Green or red?" Of course when you're asked this question it will be in reference to the chile.Green is served early in the season, but the red has a tendency to sneak up on you and to fill your senses with all kinds of delicious flavors.
I never know how to reply, so my choice is Christmas. Both red and green. This is especially true when ordering steaks. Smother them in both red and green chile and you can never go wrong. Hmmm, I'm starting to feel like I need a burger again.
