I was tired of settling for everyday boring food! I wanted to make everyday gourmet by simply opening a bottle of something spectacular -something I could pour over chicken or brush on a steak. I was dreaming of the earthy taste and smell of red and green chile and I was tired of settling for the watered down stuff on supermarket shelves.I wanted authentic mexican food recipes and I wanted them in 30 minutes or less.
We All Have To Eat Healthy Like you, I want to eat healthy, low fat and low carb meals. If I have to work the majority of my life, I want to at least experience the pleasure of good food. Simple food is fine, but it needs to taste great. And I crave authentic mexican food recipes-something real with flavors that will bring me back to my grandmother's kitchen. This is why, in 1999, I started New Mexico Chile Company. My goal was to produce authentic gourmet sauces at reasonable prices. Sauces so spectacular that people would say "wow".
Winner- Best In The State As Chuck & Jennie began cooking with the chile they discovered a gourmet recipe that launched them into the specialty foods business. Their sauces, under the label Coyote Trail, have won many awards most notably for the BEST RED CHILE in the state of New Mexico. Today, their gourmet sauces can be purchased at retail stores throughout the Southwest or right here on this web site
Coyote Trail Products Coyote Trail Sauces started in 2000 when Chuck Machado visited the state of New Mexico and thinking he was there to purchase Real Estate, fell in love with Green Chile. His wife almost threw him out of the house when he arrived home with 1000 pounds of frozen green chile. One day she asked him if he planned on buying the family another freezer since there was no room for hamburger.

Welcome to the Howling News featuring fun and great recipes from New Mexico Chile Company. If you like gourmet food and want some 30 minute meals, this is your home.

First, let's talk a little chile.

The green chile has been planted throughout the state of New Mexico and in August the harvest will have started. I can't wait because I miss the scent of roasted chile in the air.

On several street corners in the state roasters are set up and the scent of charred green chile hangs in the air.

 

Speaking of which, we're offering roasted, peeled and frozen green chile to our customers. It is now available on our Order Page . This is the real chile from Hatch, New Mexico. The same green chile we use in our award winning sauces.

Coyote Roll Ups are the bomb and I'm not kidding. What the heck is going on with green chile and chicken?

The combination shouldn't surprise me, but each time I taste chicken together with green chile I want to howl. You'd think I'd be over that by now and Jennie eyes me every time. You'll howl too!

Want To Spa It?

Jennie and I discovered a very laid back spa in northern New Mexico called Ojo Caliente. It has several natural hot springs and is only a short 45 minute drive from Santa Fe.

Well, the news is out now! Here's a story describing the experience. It seems that Ojo Caliente has been rated one of the Most Affordable Spa's in The United States. Read about it Here.


New Mexico In The News

Dave Dewitt, aka The Pope of Peppers, and world renown expert on chiles called our office recently and told us his magazine wanted to publish a Coyote Trail article in the September issue of Fiery Foods Magazine.

The story details how I nearly turned inside out eating hot chile in Hatch, New Mexico. You can read the story Right Here or wait until next month when the article is set to be published.

Coincidently, this issue highlights the annual Hatch Chile Festival which runs over Labor Day weekend.


Food Show Next Month

Team Coyote will be at the America's Best Food Events next month in Anaheim, California. The 3 day event, August 15 through the 17th, will feature Celebrity Chefs, a Food Competition and several opportunities to taste some of the best food around. This will include Coyote Trail Green Chile Sauce.
