I was tired of settling for everyday boring food! I wanted to make everyday gourmet by simply opening a bottle of something spectacular -something I could pour over chicken or brush on a steak. I was dreaming of the earthy taste and smell of red and green chile and I was tired of settling for the watered down stuff on supermarket shelves.I wanted authentic mexican food recipes and I wanted them in 30 minutes or less.
We All Have To Eat Healthy Like you, I want to eat healthy, low fat and low carb meals. If I have to work the majority of my life, I want to at least experience the pleasure of good food. Simple food is fine, but it needs to taste great. And I crave authentic mexican food recipes-something real with flavors that will bring me back to my grandmother's kitchen. This is why, in 1999, I started New Mexico Chile Company. My goal was to produce authentic gourmet sauces at reasonable prices. Sauces so spectacular that people would say "wow".
Winner- Best In The State As Chuck & Jennie began cooking with the chile they discovered a gourmet recipe that launched them into the specialty foods business. Their sauces, under the label Coyote Trail, have won many awards most notably for the BEST RED CHILE in the state of New Mexico. Coyote Trail Products Coyote Trail Sauces started in 2000 when Chuck Machado visited the state of New Mexico and thinking he was there to purchase Real Estate, fell in love with Green Chile. His wife almost threw him out of the house when he arrived home with 1000 pounds of frozen green chile. One day she asked him if he planned on buying the family another freezer since there was no room for hamburger.

I love this time of year. Around Labor Day the entire state of New Mexico is submerged under a chile cloud.

Some states have rain and others are known for smog, but in early fall, New Mexico is alive with the rich scent of roasted green chile in the air.

Newly picked green chiles are tumbled in home made, street corner roasters and the flavors demand that you stop your car to breathe in the exotic flavor of green chile.

Enchilada Sauce Wins Award

Coyote Trail Enchilada Sauce took an award at the prestigious Zest Fest in Fort Worth, Texas. This 2008 Fiery Foods Show featured twelve categories and had over three thousand entries.

Our Enchilada Sauce was awarded third place in the prepared sauce category. This is the second award at Zest Fest for Enchilada Sauce.

We'll add this award to the several awards won by our Enchilada Sauce, most notably Best in the State, in 2005.
