Like you, I want to eat healthy, low fat and low carb meals. If I have to work the majority of my life, I want to at least experience the pleasure of good food. Simple food is fine, but it needs to taste great. And I crave authentic mexican food recipes-something real with flavors that will bring me back to my grandmother's kitchen. This is why, in 1999, I started New Mexico Chile Company. My goal was to produce authentic gourmet sauces at reasonable prices. Sauces so spectacular that people would say "wow".
